Description
PREPARATION
Grapes: Quebranta, Albilla, Italia, Torontel and Moscatel.
The Pisco Demonio de los Andes Acholado is the result of a process of mixing or “cholaring” 7.5 kg of the finest types of grapes, centuries-old varieties in the Tacama terroir. Some species that are currently extinct in Europe. Viña Tacama, the oldest vineyard in South America -16th century-, located in the Ica Valley, is the producer of Pisco Demonio de los Andes and one of the most prestigious wineries in Peru. Its vineyards are located in an oasis at the foot of the foothills of the Andes, surrounded by desert and dunes. Its distillation is carried out in Charentais copper stills resulting from the mixture of fresh fermented musts of grape varieties with a rest of 5 months in pisco vats. The pisco is not passed through wood so as not to alter the organoleptic characteristics of the original distillate. Tacama is the first vineyard in South America, created in the 1540s in the Ica Valley, Peru, by the Spaniard Francisco de Carabantes and has a centuries-old legacy dedicated to the development and innovation of the wine industry in Peru.
