Highland Park Spirit of The Bear Whiskey is inspired by the belief of Viking warriors that they could channel the spirit of the great bear of the forest before going into battle. Created with a higher-than-usual proportion of peated Orkney malt, this single malt comes of age in a combination of first-fill sherry-seasoned European oak, American oak and refill casks. Description
PREPARATION
Highland Park Spirit of The Bear matures in European oak barrels seasoned with first-fill sherry, American oak and filler barrels.
Highland Park Whiskey is made using traditional methods at one of the few distilleries that still carefully rotates its malt by hand, every 8 hours, seven days a week, to maintain a constant airflow and the exact humidity (5%) to fully absorb the intense aromatic smoke produced by the Hobbister Moor peat. The whiskey is distilled in 4 traditional stills with windows, which allows them to observe the process and maintain complete control over it. The American oak barrels used to mature the whiskey are sent to Jerez, Spain, where they are filled with the delicious liquor and left to mature for 2 years, before being emptied and returned to Orkney to be filled with whiskey. Newly blended whiskey rests for at least 1 month before bottling. During this period, the flavors of the different barrels combine and harmonize, achieving a complex but finely balanced whiskey.
TASTING
View:
Copper color with distinctive amber tones.
Nose:
Aroma of soft berries, dark chocolate, silky vanilla, sun-dried orange zest, freshly grated nutmeg and aromatic peat smoke.
Mouth:
Layers of red fruit are infused with swirls of dark chocolate, silky vanilla and orange zest, while bright peat galvanizes this whiskey with an unforgettable burn of intense aromatic smoke.
