 PRODUCTION

Heiko Hoos London Gin is produced artisanally through the small-batch method using fresh, soft water from the Palatinate Forest, thus following the path of a traditional method. The 15 botanical ingredients used in its production are organically grown: juniper, coriander, lemon zest, orange zest, marjoram, lemon balm, pine shoots, sweet fennel, chamomile, and cardamom seeds. These botanicals are macerated for approximately 2 days in neutral alcohol and then distilled in a copper still from the renowned German still manufacturer Arnold Holstein. It is cooked at low temperatures. No more than 120 bottles of 0.5L each are produced. They are stored separately and left to rest for a few weeks before blending with soft spring water from the Palatinate Forest. As is typical in a London gin, no sugar is added after distillation and a final cold filtration is omitted. Filling and labeling are done by hand, each bottle is assigned a handwritten number and fire identification.

Appearance:
Crystal clear.

Nose:
Fine aromas of forest, blooming lavender, fresh chamomile, strong juniper, and nuanced pine buds.

Palate:
Notes of chamomile and cardamom seeds. Dry, aromatic, earthy, and woody flavor, with a pine resin note that gives it the typical character of a London gin.
