Winemaking
François Voyer uses only Ugni Blanc grapes harvested from his 28 hectares of vineyards, located in the First Cru of Cognac. The process begins with the fermentation of grape must with different strains of yeast depending on the climate. After vinification, the spirit is distilled very slowly in traditional Charentaise stills. Interestingly, Voyer distills on the lees, which produces a richer, more fragrant and rounded final product. All their cognac is double distilled, and the heart of the spirit is selected in the traditional way, by the sense of smell of its distillers! XO Grande Champagne 1er Cru Old Cognac is a cognac blended with spirits aged between 10 and 25 years, all of which have been aged in new Limousin oak barrels for the first 3 years. The spirit is then aged again in refill barrels for the remainder of its maturation.
Tasting notes
View: Amber color with touches of aged gold.
Nose: Richness of aromas such as wild peach, plum and quince, balanced between fruits and wood with notes of vanilla and subtle touches of pepper and spices.
Path: The long aging in oak barrels gives it the harmony and characteristics of an excellent old cognac. Elegant and refined, wonderfully intense and well balanced. The woody flavor, with notes of soft and powerful fruits, which continues with hints of nuts and vanilla in the long and complex finish.
