They have been distilling the wine produced from their harvest themselves since the 1870s and today continue crafting their production with meticulous traditional techniques, aging their eaux-de-vie in oak barrels since the 1870s, for more than 5 generations. Their spirit is made entirely from Ugni Blanc grapes grown in their small vineyards in Grande Champagne. The wine is fermented with different yeasts depending on climatic conditions. Double distillation takes place in traditional Charentais stills, with the lees included. Finally, the heart of the spirit is selected using the traditional method, by the distillers' sense of smell!
