Description
Winemaking
Renowned for its traditional and meticulous methods, François Voyer is one of the few cognac houses that distills its own harvest. The breadth of their cellars is illustrated by this cognac, which contains spirits up to 60 years old, and no spirits less than 40 years old, which guarantees that it well deserves the Hors d'Âge classification. Hors d'Âge Grande Champagne 1er Cru Exceptionnel is made from Ugni Blanc grapes grown in the House's 28-hectare vineyard on lees, producing a spirit of greater body and character, and is slowly distilled with Voyer's two traditional Charentaise stills. The Hors d'Âge Grande Champagne 1er Cru Exceptionnel cognac was selected by Alain Ducasse, the most Michelin-starred chef in the world, to be the house cognac at the iconic restaurant "Le Jules Verne", which is located on the first floor platform of the Eiffel Tower.
Tasting notes
View: Dark amber color.
Nose: The quintessence of the aromas of Grande Champagne: a multitude of fine and powerful notes of coffee, cocoa, spices (clove, cinnamon), some delicate but persistent aromas of dried fruits.
Mouth: Encapsulates the quintessential flavors of Grande Champagne. Its incredible complexity lies in the mists of the imagination, so that even after many minutes on the palate, new flavors continue to be exposed and unearthed; dark truffles, berries, delicate notes of pepper, cedar and vanilla. It is a symphony, a musical score of refined notes. The complexities are beyond imagination and the aftertaste is amazing.
