Description
Winemaking
The estate of François Voyer is located in the communes of Verrières and Ambleville in the First Cru of Grande Champagne. This cognac is made entirely from Ugni Blanc grapes grown in their small vineyards in Grande Champagne. After the characteristic Voyer distillation process (which is carried out on lees and very slowly in traditional Charentaise stills), the spirit has been aged in virgin Limousin oak barrels for the first 3 years of its maturation. The rest is filled into cognac barrels. Extra Cognacaise Grande Champagne 1er Cru Old Cognac contains spirits aged between 10 and 45 years, by which time it has developed astonishing levels of complexity and depth of flavor.
