Ancestral Nº 8 Grande Champagne 1er Cru Exceptionnel is an amazing and opulent Grande Champagne cognac made by François Voyer. For more than 200 years, the vineyards of this property have been cultivated on the lands of Verrières and Ambleville, two towns with an exceptional reputation for Grande Champagne, 1er Cru de Cognac (France). The winery dates back to the time of the French Revolution, they have distilled their own production since the late 19th century and have one of the deepest and oldest cellar reserves in the industry. The François Voyer Ancestral Nº 8 cognac is the eighth batch of this small production release. This is a rare and exceptional cognac, close to perfection, of which only 186 bottles were produced.

PRODUCTION
The ancestral spirit that makes up this cognac is drawn from the Paradise Cellar of François Voyer. This cellar is reserved for the estate's oldest and rarest eaux-de-vie, and has the perfect climatic conditions for long aging. The eau-de-vie used to make Ancestral Nº8 Cognac Grande Champagne 1er Cru Exceptionnel is distilled from Ugni Blanc grapes grown in the House's 28-hectare vineyard on the lees and is crafted with Voyer's two traditional Charentais stills. It is aged in new Limousin oak barrels for 3 years, before being aged again in old cognac barrels in a damp cellar and finally in demijohns. The average age of the eaux-de-vie contained in this cognac is 50 to 80 years.
TASTING
Appearance: Dark amber color.
Nose: Deeply aromatic. Spicy and delicate aromas unfold at first (such as cedarwood, nutmeg, and licorice).
Palate: Incredibly complex, it offers flavors of black licorice, beeswax, cedarwood, pine, licorice, milk chocolate, dried herbs, stewed plums, apples, pepper, honeysuckle, tobacco, old oak, peaches, leather, nutmeg, cinnamon, vanilla, grapes, and raisins. With steady, direct development toward a palate length that matches the most elegant 50-year-old Grande Champagne cognacs.
