Description
PREPARATION
Grapes: 50% Monastrell and 50% Cabernet Sauvignon.
The Enrique Mendoza Cabernet Sauvignon-Monastrell 2021 red wine has been made with Cabernet Sauvignon grapes from vineyards with sandy-silty soils and good drainage, double-guyot pruned, an ideal method to control and distribute the clusters, delaying ripening, and with the Monastrell variety grown in rigorous dry land, in glass, in sandy loam soil and with low density. Both from the “El Chaconero” farm and the “Valle de las Quebradas” at the foot of Cabezo de la Virgen in Villena. This wine fermented in stainless steel tanks at low temperatures. The malolactic fermentation took place in barrels and was aged for 12 months in French Allier oak and American Oregon oak barrels. Due to its artisanal production, this wine may have natural sediments with age.
TASTING
View: Medium-high layer, ruby red color with garnet highlights. A good glycerin can be seen in it that falls slowly indicating a mature vintage.
Nose: Aromas of ripe fruit, red berries, spices and menthol from Cabernet. The barrel accompanies the wine without being in the first place, reminding us of aromas of smoke, charcoal and cigar box. In this wine, Monastrell expresses itself, reminding us of scrubland (rosemary, thyme, bay leaf, pine and excellent balsamic).
Mouth: Round, serious entry with fine and elegant tannins that will help you live for the next 10 years.
