Domaine Ponsot Corton-Charlemagne Grand Cru 2023 is one of the most prestigious and unique white wines of the Côte de Beaune in Burgundy, made exclusively from Chardonnay grapes sourced from Grand Cru vineyards. Domaine Ponsot has historically distinguished itself by harvesting later than most of its neighbors to achieve full phenolic ripeness without compromising the fruit's acidity. The grapes come from vineyards located in the climats Le Charlemagne, in the Aloxe-Corton area, and Les Languettes , located on the slopes of the Montagne de Corton on calcareous marl soils.

The production of Domaine Ponsot Corton-Charlemagne Grand Cru 2023 stands out for a philosophy of minimal intervention that seeks to highlight the purity of the terroir without wood masks or chemical manipulations.

The following details the winemaking and aging process of this wine step by step:

The 100% Chardonnay grapes from the Montagne de Corton vineyards are hand-picked into small crates to prevent bruising. Domaine Ponsot intentionally harvests a few days later than most other producers in the area to ensure optimal aromatic and phenolic ripeness.

The whole bunches are transferred directly to the pneumatic press by gravity. A very gentle pressing is performed to extract the free-run juice, removing any bitter compounds. Subsequently, the juice undergoes static settling at a low temperature for 24 to 48 hours to remove the heavier lees.

The must is transferred to old French oak barrels (between 5 and over 20 years old). New oak is categorically rejected. Fermentation begins naturally thanks solely to the vineyard's native yeasts, with controlled temperatures maintained to preserve the wine's delicate fruitiness.

During the spring following the harvest, malolactic fermentation occurs spontaneously in the barrels, converting malic acid into lactic acid. The wine is then aged on its fine lees with minimal bâtonnage to prevent over-oxidation and preserve its mineral acidity.

After approximately 16-18 months, the wine is bottled by gravity. This takes place in an inert nitrogen atmosphere to minimize the addition of sulfur dioxide (SO₂). Finally, the bottle is sealed with the high-tech synthetic ArdeaSeal stopper, which ensures constant oxygen transfer and completely eliminates the risk of cork defect.

Tasting notes

View:

Bright straw yellow with clean greenish reflections and subtle golden highlights that denote the grape's ripeness. It is absolutely transparent. When the glass is swirled, it forms fine, dense tears that fall steadily and evenly, hinting at its full body on the palate.

Nose:

The wine features prominent notes of crisp green apple, Williams pear, Amalfi lemon peel, and a hint of candied white grapefruit. It displays the unmistakable character of the Montagne de Corton terroir , dominated by aromas of wet chalk, freshly struck flint, and a very fresh, saline profile. Aging in used barrels imparts subtle nuances of artisanal butter, brioche, and green almond without any aromatic interference from vanilla, toast, or sweet woods. After a few minutes of aeration, subtle notes of orange blossom and jasmine emerge.

Mouth:

A powerful, ample, and enveloping entry. It displays a glyceric and expansive mid-palate that coats the mouth with a silky smoothness. It possesses a marked and electric acidity that acts as a backbone. This acidic tension balances the richness and density characteristic of the 2023 vintage, achieving a harmony between volume and freshness. The fruit intensity intensifies alongside a pronounced savory and saline sensation that stimulates salivation and adds depth. An exceptionally long finish, easily exceeding a minute on the palate with a constant vibrancy. It leaves a persistent aftertaste of citrus peel, limestone, saline nuances, and a subtle, noble bitterness reminiscent of grapefruit rind and raw almond.
