PREPARATION

Grapes: Chardonnay and Pinot Noir.

The preparation of this 2010 Vintage Champagne was a challenge for Dom Pérignon. The winter was harsh, the spring dry and late. After a particularly sunny decade, such freshness was surprising. The summer was hot, but not excessively so. Only two days of torrential rain disrupted this ideal trajectory. Within a few days, sprout developed in the grapes, mainly in the Pinot Noir. This triggered a race against time: the vines were not yet fully ripe, but a decision had to be made. Dom Pérignon quickly deployed all his resources to draw a precise map that delimited the maturity and good condition of each plot of his vineyard. Every minute counted. This expert approach to the situation made it possible to save excellent plots of Pinot Noir grapes. They overcame the challenge: Dom Pérignon declared this vintage "saved from the waters" and Champagne Dom Pérignon Vintage 2010 the fruit of intuition and mastery.

TASTING

View: Golden color with greenish reflections; good perlage.

 

Nose: The luminous sweetness of tropical fruit (green mango, melon, pineapple) shines instantly. Then it gives way to more temperate notes, the tingle of orange zest, the mist of a tangerine. The wine breathes, revealing its freshness. The flower after the rain. A tactile sensation of peony, jasmine and lilac.

 

Mouth: The wine immediately imposes its broad, full and massive presence. A delicate sensation dominates since the tactile is quickly overcome by the aromatic. The body unfolds generously, firm and controlled. It then contracts, letting the wine vibrate with spices and pepper. The energy is maintained until a sparkling saline finish.

 

Recommended temperature: 8-10ºC.
