PREPARATION

Clase Azul Ultra Extra Añejo Tequila is made with carefully selected blue agave so each bottle of Clase Azul Extra Añejo is a handcrafted work of art, decorated with a striking design and hand-painted ceramic ornaments. On his journey whose duration is almost 14 years. Its aging for 5 years is carried out first in American whiskey barrels and later in Spanish barrels that previously contained sherry, providing a sublime touch.

TASTING

Nose:

Aroma reminiscent of sherry, prunes, apricot and cherry, maple syrup, hazelnut and intense oak notes.  

Mouth: It has a flavor of prunes, cinnamon, caramelized custard, vanilla and crystallized ginger.

Winemaking

The production process of Clase Azul Ultra Añejo is a masterpiece of patience, artisanal precision and mastery in the selection of barrels. Each of its stages is designed to transform the agave into a world-class liquid jewel.

We use exclusively 100% mature Tequilana Weber Blue Agave, grown in the mineral-rich soils of the Los Altos region of Jalisco. The plants grow for a period of 7 to 10 years until they reach their optimal sugar level. The jimadores manually cut the stalks with the coa to extract the pineapple with millimeter precision.

The agave pineapples are placed in traditional masonry ovens (stone and brick). They are slow cooked with steam for approximately 72 hours. This prolonged process caramelizes the natural sugars, eliminates any trace of bitterness, and softens the plant fiber. Once cooked, the piñas are carefully crushed to separate the sweet juice (agave honey) from the woody fibers, ensuring a clean, top-quality base for fermentation.

The agave must is transferred to tanks where it is mixed with pure water. Proprietary yeast strains developed by the distillery itself are inoculated, guiding a controlled fermentation that enhances the fruity, complex and refined aromatic profiles.

The fermented liquid undergoes a rigorous double distillation in traditional copper stills. The Master Distiller carefully supervises the cuts to discard the heads and tails, preserving only the "heart" of the distillate, guaranteeing absolute purity.

To achieve its Ultra Añejo status, the tequila is moved to American oak barrels that previously contained Sherry wine. The distillate rests for 5 long years in these special barrels. This prolonged aging is the determining factor that gives it its deep mahogany color, its velvety texture and its unmistakable notes of dried fruits, sweet sherry and fine spices.

Tasting notes

Impressive deep mahogany tone, adorned with rich copper highlights and dark reflections. It presents an exceptional density in the glass, with heavy and extremely slow tears that visually reflect its long aging, its great unctuousness and its silky structure.

Nose:

High intensity, enveloping, hypnotic and overwhelmingly elegant. Ripe and deep notes of dried fruits (prunes, figs and dates), sweet sherry, toasted caramel and intense vanilla stand out. Spicy accents of ginger, cinnamon and nutmeg are perceived, accompanied by a subtle background of pipe tobacco and dark chocolate.

Mouth:

Exceptionally soft, silky and velvety on contact with the palate. A complex and harmonious explosion of flavors unfolds that include ripe fruits, toffee, toasted oak, pure cocoa and a touch of spice. It has an impeccable balance; The tannic and winey influence of the Sherry barrel merge perfectly with the natural sweetness of the matured agave. Long, persistent, deep and memorable. It leaves an elegant and subtly sweet warmth in the throat, with long memories of fine spices and aged wood that linger for several minutes on the palate.

Food pairing

The extraordinary complexity, the depth of its five years of aging in Sherry barrels and its dominant notes of dried fruits, toasted caramel, ginger and pure cocoa make Clase Azul Ultra Añejo a meditative distillate. Its pairing must live up to its exclusivity, looking for accompaniments that harmonize with its elegance without overshadowing its character.

  • High Origin Chocolate and Cocoa: Single origin dark chocolate (with a percentage greater than 85% cocoa), dark chocolate truffles filled with nuts or roasted cocoa nibs.
  • Long-Ripened and Blue Cheeses: Long-vintage Parmigiano Reggiano, aged Manchego cheese or intense, creamy blue cheeses (such as Roquefort or Gorgonzola).
  • Premium Cigars and Habanos: A medium to high strength cigar or cigar with earthy, leathery, brown or toasted notes.
  • Fine Desserts with Nuts and Spices: Fig, date and prune tarts, fine pastries with notes of cinnamon and nutmeg, or caramelized pecans.
