Winemaking

Grapes: 66% Cabernet Sauvignon, 32% Merlot, 2% Petit Verdot

The grapes come primarily from specific plots located outside the historic L'Enclos de Laotur vineyard, including vines near Château Haut-Batailley and other plots acquired by the estate over time. These vines have an average age of around 40 years and are planted in the typical deep gravel soils of Pauillac.

The grapes are harvested by hand and undergo rigorous selection in the vineyard and again at the winery. Each batch is fermented separately before the final blend. Aging takes place for 18 months in French oak barrels, between 50% and 70% of which are new, compared to the much higher percentage used in the Grand Vin.

Tasting notes

View:

It has a deep garnet color with violet reflections. It has a high intensity and dense, slow-forming tears.

Nose:

Complex and very defined aromas of cassis, ripe plum, cedar and tobacco. Notes of lavender and violets, licorice and cocoa.

Mouth:

A broad and precise entry with fine, firm, and very fine-grained tannins. It displays excellent freshness and a profile that is more elegant than opulent. A long and persistent finish with hints of cassis, tobacco, and graphite. Touches of salinity and spice.

As this is a relatively young vintage of Pauillac, the aim is to open up its aromas and soften the tannic structure without sacrificing freshness. Decanting 1 to 2 hours before serving is recommended. A large, fine-stemmed Bordeaux-style glass is the best choice.

Food pairing

This wine pairs especially well with aged beef ribeye, beef tenderloin, roast lamb and duck breast.

Perfect companion to a creamy rice dish with porcini mushrooms and truffle.
