PREPARATION
Grapes: 80% Sauvignon Blanc and 20% Sémillon. To make Chateau Le Virou Le Carillon Blanc a mechanical harvest is carried out with selection on board and additional selection in the winery. Fermentations, vinification and aging in 225 liter French oak barrels. Batonnage on fine lees for 4 to 6 months. Château Le Virou is full of history. Today, it is the largest estate in Europe with 100 hectares surrounded by walls. This domain has taken centuries to develop, flourish and become the property we now know. The soul of Le Virou dates back to the 17th century. The property was one of the two meeting places of monks from the Catholic order called "L'Ordre des Carmes Déchaussées". For almost two centuries, they built this large monastery, a chapel and constructed numerous underground passages connecting Le Virou with the various strategic points of the region.
