Description
PREPARATION
Grapes: Xarel·lo, Macabeo and Parellada.
The grape varieties used in the Roger Goulart Brut Gran Reserva cava are made separately. The grapes are refrigerated prior to pressing, to avoid the loss of aromas. The fermentation of the musts is carried out at 16-18º C with selected yeasts. Base wines have a significant acid component and a pH that is low enough to be able to age for a long time. After the draft, the second fermentation and aging are carried out in cellars located 30 meters deep, at a constant temperature all year round of 14º C. The minimum aging in the winery is 72 months.
TASTING
View: Pale yellow color, clean, bright, with good release of fine bubbles and slight crown formation on the surface.
Nose: In its aroma, very fresh sensations can be seen with a predominance of fleshy fruits, a touch exotic, on a toasted and creamy background with hints of pastry, yeast and dried flowers.
Mouth: Lively and very pleasant acidity, voluminous, slightly crispy carbonic and very well integrated into the whole.
Recommended temperature: 6-8º C.
