Description
PREPARATION
Grapes: Moscatel and Tempranillo.
The production of Mía Moscato Rosado is carried out using fresh must from the Moscatel variety and adding a small amount of Tempranillo red wine. Alcoholic fermentation is carried out slowly until reaching an alcohol level between 5 and 5.5%. This takes place in open tanks at controlled temperatures. Afterwards, the tanks are closed hermetically and the second part of the fermentation begins, which takes place more slowly thanks to a very low temperature. This part of the process is called "prise de mousse" or bubble shot, in which the fine bubble is integrated into the wine. Raising the alcohol level to 7% for fermentation is done simply by decreasing the temperature to -1ºC. The wine is then filtered to eliminate any trace of yeast. It is aged for three months in a stainless steel vat, which fuses the winemaking tradition of thousands of years with avant-garde production techniques.
