Description
PREPARATION
Grapes: Macabeo and Xarel·lo.
The selection in the vineyard and the harvest are carried out manually, in early-mid September. The plots are selected according to criteria of freshness or acidity and aromatic potential corresponding to the product to be produced. The varieties and plots are vinified separately and are cooled at a low temperature before draining, to use only the flower must. Decantation and cleaning are carried out cold, without the addition of fining agents to proceed with controlled fermentation until it becomes base wine. After deciding on the blend of the different varieties and plots, the printing is carried out in the first months of the year. To carry out the second fermentation and aging in the cellars at low and constant temperature. The aging on lees of Dominio de la Vega Authentique Brut Nature Reserva is a minimum of 18 months.
TASTING
View: Pale straw yellow color and very fine bubbles.
Nose: Harmony of fresh, floral and citrus fruit aromas, a touch of salinity, with a background that reminds us of its aging on lees.
Mouth: In the mouth, its entry is very fresh and well-constituted, supported by a highly integrated carbon dioxide that enhances its freshness, with a fatty and pleasant finish.
Recommended temperature: 6º C.
