Description
PREPARATION
Caol Ila 12 Years is a single malt Scotch whiskey, known for its extreme smoothness and a rather light and elegant character given by the tall, onion-shaped stills in which it is distilled. It is the mildest of those made on Islay, where the distillery dates back to 1846 and has the same name. Caol Ila is pronounced [cull eela] and is the Gaelic name for the Sound of Islay, which separates the island from Jura. For some, the distillery's pronunciation is as remote as its location, lying on the rugged east coast, where it has remained hidden from view since 1846. Caol Ila is strategically located near a spring water and sources its malt from Port Ellen. The barley supplied is malted using peat, giving Caol Ila whiskeys the characteristic Islay flavor and aroma.
TASTING
View: Pale straw yellow color.
Nose: Attenuated citrus fruity aroma; a puff of bath oil and mouthwash. Fresh and appetizing nose, with little or no trace of smoke. A little water raises almond oil and old-fashioned wineskins; followed by fresh fruit, a trace of olive oil, and after a while potpourri or scented hand soap.
Mouth: Smooth and pleasant mouthfeel: firm with a light to medium body and a sweet start. Pleasant, light fragrant smoke and good acidity with some salt and a complex balance of primary flavors. APersistent and slightly acidic finish.
