Bruichladdich Octomore 12.3 is a single malt that matures for five years in bourbon and PX sherry casks. Pedro Ximénez barrels provide a luxurious nutty style that is sweet and rich. PREPARATION
To make Bruichladdich Octomore 12.3 whisky, barley raised on Church Field at Octomore Farm by farmer James Brown and grown on Islay, has been drip distilled through the tall, narrow-necked stills of the distillery just two miles from where it was grown. Before being blended, 75% was filled into bourbon casks, while the remaining 25% spent five years maturing in PX sherry casks. Bottling is done without cold filtration and without dye. Bruichladdich set out to be pioneers, provocateurs and creators of change. Reconnect land and drink, reevaluate the industry's prescribed "rules," question where flavor comes from, and understand why agricultural ecosystems matter. This was a journey that would inspire an army of distillers and drinkers around the world.
TASTING
View:
Light polished copper color.
Nose:
Smoky notes, light citrus and honey from the liqueur combine with intense floral notes of honeysuckle and orange blossom before moving into dark caramel, milk chocolate, vanilla and tobacco.
Mouth:
Spicy nasturtium flowers, dark chocolate, earthy peat smoke and sherry fruits rush onto the palate. Peat smoke and dried fruit dominate before barley sugar and charred oak appear, releasing rich notes of caramel and tobacco. Sweet pastries and toasted grains follow, before an earthy peat smoke.
