Billecart-Salmon Vintage 2009: always harvested, but only in great years, it is the result of a blend of Pinot Noir for the majority and Chardonnay for the rest, which varies slightly depending on the year, all coming from terroirs classified as Grand Cru exclusively. Vintage Extra Brut dominated by a great Pinot noir tempered by the elegance of Chardonnay from the Côte des Blancs and the distinctive touch of Meunier, which is included in the blend for the first time. After nine years of aging in the limestone cellars of the bicentennial Billecart-Salmon maison, an intense and seductive champagne awakens with aromas of stone fruit, apple and brioche and an enveloping palate that maintains great freshness and minerality.

Winemaking
Grapes: 33% Chardonnay, 27% Meunier, 40% Pinot Noir
73% of the vineyards from which it comes are Grand and Premier Crus and are located in the Montagne de Reims, Côte des Blancs and the Marne Valley. Traditionally made. Vinification in vats with partial malolactic fermentation. Dosage of 2 grams of sugar per liter (Extra Brut).
Tasting notes

Golden yellow in color, with soft golden reflections and a fine dynamic effervescence
Nose:
A fruity intensity is distinguished with citrus aromas of lemon and dried fruits that evolve into pastry notes. Pure, refreshing and refined.
Mouth:
In the mouth, the sensations of chestnut cream, fresh blueberries and Breton sablé stand out, which are amplified by a delicate texture. Persistent finish with a structure marked by the high potential of a coveted vintage.
Recommended temperature: Serve at 11-12ºC.
Food pairing
Ideal to taste accompanying red tuna with papaya and avocado or pan-fried foie gras, peach, verbena, rhubarb and barberry (prematurely harvested grape juice).
