Bestué Finca Santa Sabina is made from Cabernet Sauvignon, which is the most processed red variety in the D.O. Somontano. A structured, meaty and balanced wine. Ideal to accompany meats (grills, stews, baked dishes), spoon dishes (legumes) and cured cheeses.

Description
PREPARATION
Grapes: 80% Cabernet Sauvignon and 20% Tempranillo.
Manual harvest in 20 kilo boxes and is carried out at dawn to take advantage of the low temperatures. Destemming and cold maceration for 6 days at 8ºC in 15,000kg stainless steel tanks. Manual handling of the hat through 2 daily pumping overs, one in the early morning and the other in the late afternoon. Slow and controlled fermentations reaching 28ºC at their maximum points. Uncovering and filling of barrels to carry out malolactic fermentation and subsequent aging for 14 months in new barrels and with a wine (50/50).
TASTING
View:
Ruby red color, with violet tones.
Nose:
Intense and complex. Notes of ripe fruit predominate (Plum, blueberries, raspberry) which give way to secondary aromas (Cocoa, toasted, spicy).
Mouth:
Silky and velvety, leaving us with a marked and long aftertaste. Recommended temperature: between 17 ºC and 18 ºC.
