Ars Collecta, the legacy of almost five centuries of oenological know-how. The experience and exhaustive knowledge of our vineyards have allowed us to create this blend of varietals from two climatic zones and vineyards where the varietals show their greatest potential. Pinot Noir from Segrià (continental), the main varietal, provides freshness and aging potential. Trepat de Conca de Barberà (continental) and Xarel•lo del Penedès (Mediterranean) complement the blend. A reserve, complex, expressive and long-lived.

Description
PREPARATION
Grapes: 85% Pinot noir, 15% Xarel lo and Trepat. Ars Collecta Grand Rosé Revserva is a cava made from the selection of vineyards where the varietals show their greatest potential and expressiveness. Pinot Noir, the predominant varietal, from Costers del Segre with a continental climate, Trepat also with a continental climate from Conca de Barberà and Xarel•lo from the central plain of Penedès with a Mediterranean climate. Night harvest at the beginning of August, taking advantage of the cool temperature and avoiding oxidation of the grape aromas. For this cava, we are looking for optimal maturation of the Pinot Noir grape that provides the best color potential in the skin as well as good acidity and a moderate alcohol level. After destemming the grapes, they are gently pressed in a pneumatic press, which macerates in the press and the must is left in contact with the skin of the grapes for about 2 hours. Fermentation then begins at a temperature of between 15º and 17ºC. After aging for 15 months at a constant temperature between the thick walls of our cellars, this Grand Rosé reserve has a long life ahead of it. The entire process we follow to make this cava aims to respect what the earth gives us and achieve a fresh cava with high aging potential.
TASTING
View: Delicate salmon pink color of medium tone. Fine bubble and delicate crown. Nose: On the nose, intense aromas of raspberry, blackberry and strawberry appear intermingled with a light citrus aroma that enhances the previous ones and provides freshness. Path: On the palate, the notes of red fruits stand out, typical of the Pinot Noir variety. It is fresh, balanced and the bubbles promote the sensation of creaminess, enhanced by its aging in contact with the yeasts. Consume cold (between 8ºC and 11ºC).

Ars Collecta Grand Rosé is a perfect companion to gourmet appetizers or fish rice. Perfect with salmon and raw blue fish (in sashimi, sushi, carpaccio or tartare) or grilled, since its acidity balances the fat content of these fish. Also with lightly seasoned white meats and desserts with red fruits.
