Vol d’Ànima is the culmination of our first 100 years of history. The tiles that wear its label are the same ones that have been seen on the walls of the Raimat castle since 1935, after the renovation carried out by the architect Rafael Masó. This creation represents the soul of Raimat: a young, modern, fresh, medium-bodied red wine, with notes of cocoa, made with the 3 organic red varieties that best express the winery's terroir: Cabernet Sauvignon, Black Grenache and Syrah. It can go well with game dishes, mushrooms, meats and legumes. As well as sausages and rice. Very versatile. Prizes and scores:

Description
PREPARATION
Grapes: Syrah, Grenache and Cabernet Savignon. For Vol D’Anima, night harvest is carried out to preserve the primary aromas of the fruit. When the grapes arrive at the winery, they are cooled to a temperature of 15ºC. A part of the grape is vinified seeking a more fruity and fresh wine profile. It is achieved by keeping the temperature low for 24-48 hours and subsequently fermenting at 25ºC. The other part of the grape ferments at a higher temperature to achieve greater texture and complexity in the wine. These two styles of wine together offer us a young, modern wine, with a lot of fruit and structure in the mouth.
TASTING
View:
Cherry red color with purple reflections. Middle layer. Clean and bright.
Nose:
Primary aromas of cassis, cherries and pomegranate seeds abound. Balsamic and floral notes, violet. Hints of black licorice and freshly cut coconut intermingled with cocoa and mocha.
Mouth:
Pleasant sweet flavor at the beginning of the mouth given by the toasted oak combined with ripe black fruit. Good structure; Sweet and soft tannins, but of great power. The balsamic aromas unfold on a delicate spicy background. Final length. Its consumption temperature is between 16 and 18ºC.
