Description
PREPARATION
Grapes: 60% Garnacha, 30% Tempranillo and 10% Graciano.
The grapes used in the production of Cune Ecological-Organic wine come from regular suppliers in the Haro area and also from San Vicente, which in recent years have opted for the organic cultivation of their vineyards. The soils are mainly calcareous clay, the fertilizers used are organic and of plant origin. The use of herbicides, synthetic pesticides and any cultivation practice that could damage or modify the natural balance in the soil and environment has been avoided. The harvest was carried out manually and the grapes were kept at 12ºC for 12 hours to avoid oxidation of the must and maintain the vividness of its color. The alcoholic fermentation took place in stainless steel tanks with native yeasts and at a temperature of 24ºC, preserving the aromas and aromatic expression of Tempranillo. It was aged in oak barrels for 6 months, where it acquired volume and complexity before bottling.
