Don PX 2019 is a natural sweet white wine from Pedro Ximénez that has not been aged in wood, from the D.O. Montilla-Moriles. PREPARATION

Grapes: Pedro Ximénez.

The production of sweet wine Don PX 2019 begins with a careful harvest of the Pedro Ximénez grapes. Once in the winery, they are left spread out on mats in the sun to allow them to pass through. Once the raisins are obtained, they are pressed in a hydraulic press, obtaining a very sweet and concentrated must that will partially ferment in stainless steel tanks at a controlled temperature. After adding top quality rectified wine alcohol, the sweet wine Don PX 2019 will remain in tanks for 12 months before being bottled without filtering, which is why it may present precipitates over time.

TASTING

View: Amber color with orange trim and discreet greenish flashes. Very dense and shiny in the glass, it forms abundant tears that fall slowly.

 

Nose: Intense and expressive, sweet memories of raisins, figs, dates and dried apricots, with notes of candied orange, honey and orange blossom flowers on a fresher background of lemon juice.

 

Mouth: Enveloping and glyceric attack, with a sweet, full and very unctuous mid palate. The acidity is responsible for providing freshness and liveliness to obtain a tasty but not cloying wine. Long and persistent finish, with hints of dried apricots, figs, raisins, dates, honey and toffee caramel. An endless number of sweet sensations that contrast with a citrus background through the retronasal route.

 

Recommended temperature: 12-14º C.
