Impromptu Sauvignon Blanc 2021 is a single-varietal wine with D.O. Utiel-Requena, Valencia, made from a selection of the best grapes from low-production strains from the winery's Sauvignon Blanc vineyards. It is fermented in American oak barrels and left to rest with the lees until bottling. It is an unctuous, dense white wine with excellent acidity. It was chosen Best Sauvignon Blanc in Spain by the Peñín Guide in 2017. Its extensive aging capacity is also very notable. It is ideal to pair with seafood, fish, cured cheeses, vegetables, smoked meats, seafood rice or white meats. Awards and recognitions:

Description

PREPARATION
Grapes: 100% Sauvignon Blanc.
For the production of Impromptu Sauvignon Blanc 2021 white wine the best grapes from low-production strains from Sauvignon Blanc's own vineyards are selected. The grapes are harvested in special boxes in the morning, to keep them at a good temperature. Once in the winery, they are kept at -10ºC, destemmed and crushed. All the resulting grape paste is placed in a stainless steel tank with a cooling system to subject the grapes to a cold skin maceration (8º C) for more than 24 hours. The grapes are then passed to the pneumatic press to carry out a light pressing and the extracted must is decanted statically for 24 hours and then the clean part is fermented in new American oak barrels at 14º C. Once the fermentation is finished, it is kept on the lees until bottling.
TASTING
View: Yellow color with greenish reflections.
Nose: Very intense, mineral aroma, reminiscent of aromas of fresh tropical fruit and compote.
Mouth: With a good weight of fruit in the mouth, unctuous, dense, good final acidity and very long.
