The Enate Chardonnay-234 2021 white wine is the result of a calmly thought-out project that breaks with the traditional image of fragility that Spanish white wines carry. We recommend tasting it not too cold, between 10 and 12º C, so you will enjoy the perfect ally for pasta, fish, seafood and white meats. Its label is an original design for Enate by artist Pepe Cerdá.

Description
PREPARATION
Grapes: 100% Chardonnay.
For the production of Enate Chardonnay-234 2021 white wine the grapes, harvested at night, arrive at the winery and are placed in a pneumatic press where they are kept for five hours in skin maceration (what the Anglo-Saxons call “skin-contact”), to obtain the most delicate aromas of the fruit. After static deburbation at 10ºC for 48 hours, the clean must begins to ferment, under the action of selected yeasts of the genus Saccharomyces Cervisiae, Prise de mousse strain, in stainless steel tanks at a controlled temperature (16ºC). After fermentation, the wine is clarified with bentonite and stabilized at -5ºC, to eliminate excess potassium bitartrate. 2021 was characterized by mild temperatures in the period from January to October and low rainfall. Climatic conditions that favored a more rewarding vineyard cultivation, with hardly any phytosanitary treatments. And because the summer was mild and cool, ripening was slow and complete, with no hint of overripeness.
TASTING
View: Pale yellow color with glaucous reflections.
Nose: Complex and intense varietal aroma of green apple, ripe peach, fennel and exotic fruits (guava, passion fruit), on a discreet mineral background.
Mouth: Broad, fatty palate, with a clean and fresh palate thanks to its sustained acidity. Slightly syrupy finish.
Recommended temperature: 10-12º C.
