Scala Dei Cartoixa is a tribute to the old and own vineyards dotted over the emblematic landscape of Scala Dei. A careful selection of the best grapes from our best vineyards. It is a wine that pays tribute to classic production, with stems, in cement tanks and aging in large barrels, and modern Bordeaux, which enhances fruit and extraction. It is a Priorat with the seal of freshness conferred by the height of the privileged vineyards of Scala Dei. It is an ideal companion for main or main first courses. Description
PREPARATION
Grapes: Red Grenache 80%, Cariñena 20% Scala Dei Cartoixa is the result of combining modern and traditional production techniques. Grenache and Carignan, selected from the best plots, were refrigerated before being placed in small tanks to start fermentation. When the temperature began to rise, a pre-fermentation maceration had already finished. Contact with the skins occurred for about 20 days, with daily stomping. Aging for 24 months in 1400 liter foudres, 500 liter bocois and 2100 liter cement tanks. Grenaches, having different origins, altitudes and soils, need different treatment for their aging since each vineyard is raised separately in the container that we consider best expresses its terroir.
TASTING
View: High or very high layer, dark, dense deep cherry color, violet hues.
Nose:
The intense and persistent aromas of ripe black fruits, plums and a floral touch of violets intermingle with evident mineral notes provided by the llicorella, which give it a Priorat typicality. The rest of the aging gives it spicy aromas.
Mouth:
In the mouth it is a powerful, unctuous, smooth wine, with intense ripe tannins, an imposing body, long and persistent over time.
