PREPARATION
The Romate Solera Reserva brandy is made following the tradition of Jerez brandy and is aged in Pedro Ximénez wine casks that give it a sweet character and a fruity profile, with an average age of about 5 years. The winery continues to respect traditional processes; It carries out a very careful winemaking process based on the white albariza soil, the Palomino, Airén and Pedro Ximénez grape varieties and the unique microclimate of Western Andalusia. The aging of its products takes place in American oak barrels, the distillation of the brandies in copper alquitares and the aging according to the characteristic Criaderas and Soleras system.
TASTING

Nose: Clean and round aroma. Memories of wine and old oak with notes of wood, black fruits such as plums, figs and raisins, spices such as vanilla, cinnamon, licorice, tobacco, toast, toffee, caramel or chocolate.
Mouth: Dry and very soft. Very pleasant entry into the mouth, despite its first burning sensation, it is very sweet, unctuous and velvety, transmitting softness and warmth, very balanced, without edges, with a harmony of nuances, great body and structure. Very persistent finish.
