Pauillac de Latour 2022 Magnum 1.5L.
The Pauillac de Latour 2022 belongs to one of Bordeaux's most historic and acclaimed vintages. The 2022 vintage was characterized by an extraordinarily hot and dry summer that produced grapes with a concentration of fruit, maturity and richness of exceptional tannins, but maintaining a surprising freshness in the final result. Unlike the fresh, light acidity of the 2021 vintage or the tertiary maturity of the 2011, the 2022 vintage in Pauillac was marked by a dry summer and high temperatures. This resulted in a very small, concentrated grape with skins rich in polyphenols. Considered by international critics as a true «baby Latour», this wine stands out for offering unusual depth and packaging for being a "third wine" from the property.

Winemaking
Grapes: 49% Cabernet Sauvignon, 46% Merlot, 5% Petit Verdot
The production of Pauillac de Latour 2022 combines the technical precision of modern oenology with a deep respect for traditional Bordeaux methods and biodynamic cultivation. Coming from the legendary Château Latour winery, this wine shares the same facilities, the same technical team and the same rigor as the first wine (Grand Vin).
The harvesting was done entirely by hand in small boxes so as not to damage the clusters. Only fruit grains at their ideal point of maturity go to the winemaking phase. Each plot and variety (Cabernet Sauvignon, Merlot and Petit Verdot) is fermented separately in thermo-regulated stainless steel tanks of different sizes. Alcoholic fermentation is carried out with native yeasts at controlled temperatures to extract color, aromas and polyphenols without bitterness. During the post-fermentation maceration (which lasts about 2 to 3 weeks), very moderate daily pumping overs are carried out to extract the fine and silky tannins that characterize the 2022 vintage. After devatting, the wine undergoes malolactic fermentation (which softens the acidity) partly in tank and partly in barrel.
The wine is racked into French oak barrels (médocaines of 225 liters). 20% new French oak barrels and 80% single-use barrels are used. It remains in wood for approximately12 monthss. During aging, periodic racking is carried out and it is clarified in the classic style with natural egg white to clean the wine without aggressive filtrations.
True to Château Latour's philosophy, the wine is not marketed immediately after bottling; It rests in the underground cellars of the winery until it is at the ideal point to go on the market.
Tasting notes
View:
Intense and opaque purple-red color, with a very vivid violet rim that shows its youth. Totally clean, crystal clear and shiny. With a dense, uniform tear that falls slowly, anticipating its body and graduation.
Nose:
It highlights a very concentrated black fruit at its optimal point of maturity. Notes of cedar, tobacco, pure cocoa and warm spices such as black pepper and clove appear. Mineral background characteristic of the Pauillac soil, with hints of pencil lead and dried violets.
Mouth:
Powerful, fleshy and enveloping entry. Medium-high to full body. The abundant Merlot gives it a sweet and juicy texture in the center of the palate, while the Cabernet Sauvignon gives it a firm and aristocratic backbone. Important but impeccably mature tannic muscle, very fine grained and velvety to the touch, without edges or dryness. Surprisingly balanced; The acidity maintains the necessary freshness to compensate for the heat of the vintage and the alcoholic volume. Long, persistent and tasty finish. In the aftertaste, memories of cassis liqueur, black licorice, fine cocoa and graphite persist.
Food pairing
Pauillac de Latour 2022 is a powerful, fleshy, concentrated wine with an alcohol content of almost 15% vol., marked by the warmth and maturity of its harvest. Unlike lighter or Atlantic vintages, the 2022 requires dishes with structure, aromatic weight and a certain presence of fat or powerful protein to combine with its ripe tannins and volume.
