Description
PREPARATION
Grapes: 100% Tempranillo.
The winery makes a selection of the oldest vineyards in Pedrosa de Duero, vines that are more than 80 years old. The type of soil is clayey-calcareous, stony, very poor in fertility and low production. To make Pago Capellanes Reserva wine, a selected harvest is carried out in boxes. Pre-fermentation cold maceration for 3 days below 12º C. Fermentation in stainless steel tanks at controlled temperature, with pumping over and phenolic control of the must-wine in maceration. Spontaneous malolactic fermentation in barrels at low temperature with periodic batonnage of its own lees. It is aged for 19 months in 225-liter extra-fine grain French oak barrels. Bottling took place in February 2021.
TASTING
View:
Intense cherry red color with ruby nuances on the edge.
Nose:
Clean and intense aromas of ripe black and red fruits such as blackberry, plum and currant, with smoky and spicy nuances such as licorice and clove provided by the extra-fine grain French oak wood.
Mouth:
Very fresh and balanced, silky and powerful, very polished tannins. A long finish full of flavors and clean aromatic sensations. Recommended temperature: Store at 12º-14ºC.
