Olivier Leflaive Puligny Montrachet Les Enseignères 2022 75cl.

The Olivier Leflaive Puligny-Montrachet "Les Enseignères" 2022 is one of the most prestigious, coveted and highest category in all of Burgundy. It comes from the iconic lieu-dit Les Enseignères, a plot located at the bottom of the slope that adjoins directly and immediately below the legendary Grands Crus Bâtard-Montrachet and Bienvenues-Bâtard-Montrachet. Due to this proximity and the similarity of its subsoil, it is considered by experts as a "baby Grand Cru" or a Premier Cru quality wine hidden under a communal label.

Logically divided into two sections (the upper part next to the Grands Crus and the lower part near the road), the strains selected by Olivier Leflaive in Les Enseignères provide a density of fruit and depth unusual for a wine of its category, combined with Puligny's famous mineral tension and floral elegance. An outstanding and balanced vintage in the Côte de Beaune. The year 2022 gave the Chardonnay an impeccable phenolic maturity, a notable fat volume and a vibrant acidity that perfectly frames the complexity of this payment.

Winemaking

Grapes: 100% Chardonnay

100% manual harvest collected in small perforated boxes to preserve the integrity of the Chardonnay grains and avoid any type of premature oxidation. Gentle pressing of whole clusters. The resulting must is subjected to débourbage (cold static decantation) for 12 to 24 hours to purify it from the coarse lees.

Spontaneous fermentation with native yeasts in French oak barrels. The wine naturally completes 100% of the malolactic fermentation to soften the acidity and gain tactile complexity.

Aging for one year in barrels with a very moderate use of new oak (15-20%) to respect the mineral identity of the plot. Controlled removal of lees (bâtonnage) is carried out at the beginning. The wine is transferred to stainless steel tanks during the last 3 or 4 months prior to bottling by gravity, refining the citric acidity and homogenizing the batch.

Tasting notes

View:

Pale golden yellow, clean, bright and very luminous, with greenish reflections that reveal its enormous aging potential.

Nose:

Complex, profound and of aristocratic finesse. It displays aromas of white flowers (orange blossom and jasmine), ripe stone fruit (vine peach) and pear, intertwined with notes of fresh hazelnut, fine butter, brioche and a marked background of flint stone and chalk.

Mouth:

Wide, enveloping and high-volume entrance. In the mouth it shows a silky and unctuous texture, perfectly offset by a backbone of lively citric acidity that gives it an outstanding vertical freshness. Long, deep and markedly saline finish, leaving a persistent memory of candied citrus, dried fruits and chalk in the aftertaste.

Food pairing

The star pairing for the Olivier Leflaive Puligny-Montrachet "Les Enseignères" 2022 is the grilled lobster or lobster with fine herb butter, as well as a baked wild turbot with beurre blanc sauce. The great density and richness of this lieu-dit, combined with its vibrant mineral tension, demands dishes of haute marine cuisine where the light butter and iodization of the seafood harmonize with its "baby Grand Cru" structure.

Here are additional pairing options organized by culinary categories:

  • Hake cocochas with soft pil-pil

  • Natural crab or sea ox (with a light mayonnaise of candied lemons)

  • Pintada or roasted capon with light juices and seasonal truffle

  • Poultry breast in a crust of fine herbs

  • Boletus edulis and seasonal mushroom risotto with Echiré butter

  • Fine white truffle cream with poached farmhouse egg yolk.

  • Grilled San Pedro or Grouper with sea urchin emulsion.

  • Monkfish stewed in short fish stock with a touch of saffron

  • Beaufort d'été (24 months of curing)

  • Langres tuned to Marc de Bourgogne
