Olivier Leflaive Puligny Montrachet 2022 75cl.

The Olivier Leflaive Puligny-Montrachet 2022 is one of the most emblematic and representative Village cuvées of the house. Compared to the roundness of Meursault or the meatiness of Chassagne-Montrachet, this wine embodies the classic identity of Puligny: total finesse, aromatic precision, floral elegance and a marked saline mineral tension.

The house assembles carefully selected plots within the communal area of Puligny. The thin layer of earth on limestone rock provides a very vertical sharpness, freshness and mineral energy. Exceptional harvest in the Côte de Beaune that combined optimal fruit ripeness with impeccable health status. In Puligny, this translates into magnificent purity of white fruit, silky texture in the mouth and a very clear aromatic profile.

Winemaking

Grapes: 100% Chardonnay

Manual harvesting of whole bunches in 13 kg perforated boxes to protect the Chardonnay grapes from premature breakage or oxidation before reaching the winery. Gentle pneumatic pressing of whole bunches. The must goes to tanks to carry out a débourbage (static cold decantation) for 12 to 24 hours to separate the coarsest lees.

Fermentation in French oak barrels with native yeasts. Perform complete 100% malolactic fermentation naturally to provide balance and stability.

Aging for one year in French oak barrels with a moderate use of new oak (15-20%) to respect the floral and mineral identity of Puligny. Moderate stirring of lees (bâtonnage) is carried out. The wine is transferred to stainless steel tanks before bottling. This phase allows the citric acidity to settle, assemble the different batches and provide great freshness to the whole.

Tasting notes

View:

Very pale straw yellow, limpid and with a notable crystalline shine, enriched with subtle greenish flashes that attest to its youth and vitality. Totally transparent, with a fine, fluid tear with a slow fall that heralds lightness, tension and a perfectly balanced alcohol content.

Nose:

Nose characterized by maximum finesse, purity and aromatic elegance. Notes of orange blossom, acacia and jasmine emerge, intertwined with crisp white fruit such as green apple, water pear and a lively touch of lemon peel. Very subtle and in the background thanks to the restrained use of new wood (15-20%). Delicate nuances of fresh hazelnut, soft butter and a light touch of freshly baked brioche are perceived. Marked calcareous character, with memories of flint stone, chalk and a subtle sea breeze that define the unmistakable typicality of Puligny.

Mouth:

Direct, clean, precise and energetic input. It passes with fluidity and stylized elegance. It has a silky texture without being heavy, where the ripe white fruit is supported by a backbone of very lively citric acidity. It stands out for its great tension, linearity and vertical freshness, showing the classic technical precision of the house. Very long, clear and refreshing finish. It leaves an elegant memory of citrus zest, green hazelnut and a long saline and mineral aftertaste on the palate.

Food pairing

The star pairing for the Olivier Leflaive Puligny-Montrachet 2022 is the carpaccio or wild scallop tartare with a touch of low acidity olive oil and zest of file, or a wild sole a la Meunière.

  • Carpaccio or wild scallop tartare

  • King crayfish or grilled white prawns

  • Pularda or poultry breast with white lemon sauce and fine herbs

  • Soft goat cheese (Crottin de Chavignol)

  • Young Comté (12 months)
