Olivier Leflaive Puligny Montrachet 1er Cru Folatières 2022 75cl.

The Olivier Leflaive Puligny-Montrachet 1er Cru "Les Folatières" 2022 represents one of the absolute summits within the First Crus of the winery and of the entire appellation. The payment of Les Folatières is one of the largest, most historic and prestigious climats of Puligny-Montrachet, located in the upper part of the slope, just above Pucelles and adjacent in altitude with the domains of the Grands Crus. It combines generous, enveloping opulence with extraordinary mineral finesse and alpine elegance.

Located on the upper strip of the Puligny slope, Les Folatières benefits from optimal sunshine and fresh air currents that slightly delay ripening. This allows the Chardonnay to achieve outstanding aromatic complexity without losing an ounce of acid tension. A solar, balanced and extremely generous vintage in the Côte de Beaune. The year 2022 provided impeccable phenolic maturity and a notable fatty texture, perfectly framed by the vibrant natural freshness of the appellation.

Winemaking

Grapes: 100% Chardonnay

100% manual harvest of whole bunches carefully selected in the vineyard to guarantee maximum health and avoid any type of premature oxidation. Gentle and progressive pressing of whole clusters. The resulting must is subjected to cold static decantation (débourbage) for 12 to 24 hours to purify it of coarse lees.

Natural fermentation with indigenous yeasts in French oak barrels. The wine biologically completes 100% of the malolactic fermentation to round out its tactile texture.

Aging for more than a year in French oak barrels (with a moderate percentage of new wood of 25-30%) and lees stirring (bâtonnage) controlled during the first months. The wine is transferred to stainless steel tanks during the last 4 months prior to bottling by gravity, allowing the batch to be unified and enhancing its citrus precision.

Tasting notes

View:

Pale golden yellow of great luminosity, with deep greenish flashes and steely reflections that enhance its brilliance and denote the vitality of the 2022 vintage in a Premier Cru this category. Completely crystalline and diaphanous appearance, the result of a natural clarification process and absolute respect for the raw materials in the winery. Glyceric tears, dense and slow falling. When you shake the glass, it forms marked and persistent arches that anticipate the volume, richness and breadth in the mouth characteristic of Les Folatières.

Nose:

Of enormous complexity, opulent but endowed with great aerial finesse. It unfolds with dazzling directness, showing aromatic layers that constantly evolve in the glass. Domain of very elegant wild white flowers (acacia, orange blossom and hawthorn), accompanied by ripe and vibrant stone fruit (vine peach, fresh apricot and a sparkling nuance of tangerine peel and yellow grapefruit). With a measured use of new barrel (25-30%), the wood melts imperceptibly providing notes of toasted hazelnut, fine butter, fine strands of warm brioche and a very subtle echo of sweet spices. The base is dominated by a marked calcareous and earthy character. Notes of wet chalk, flint stone (silex), flint and a deep saline breeze emerge clearly, providing a very distinctive vertical and austere dimension.

Mouth:

Wide, dense, enveloping and high-impact entry, which fills the palate with a rich and buttery texture from the first second. It develops outstanding volume and a silky, almost creamy texture, where the fruit generosity of the vintage is balanced in a millimetric way with a backbone of very lively and sharp citric acidity. Despite its great weight and concentration, the wine is not heavy; The mineral tension and freshness of the high slope give it a linear, elegant and deeply vertical structure. Extraordinarily long, deep and persistent finish, which lasts for several minutes, leaving a feeling of total harmony and cleanliness on the palate. Upon expiration, memories of candied citrus zest, toasted nuts and a long, austere and markedly saline echo of chalk and limestone rock reappear with intensity.

Food pairing

The star pairing for the Olivier Leflaive Puligny-Montrachet 1er Cru "Les Folatières" 2022 is the roasted blue lobster with white truffle butter, as well as a pan-fried wild turbot with a fine iodine and citrus emulsion. The great density, unctuous richness and deep mineral tension of this Premier Cru demand dishes of haute marine cuisine where the butteriness and elegance of the product reach maximum harmony.

More haute cuisine culinary proposals that pair perfectly with their complexity:

  • Grilled wild grouper with saffron emulsion and toasted pistils

  • Supreme wild salmon or salmon trout with light white butter sauce and fresh dill

  • White or pulard partridge stewed at low temperature with short poultry juice and thin slices of Burgundy truffle

  • Roasted guinea fowl breast with creamed morel sauce

  • Blue lobster gratin with a light coral muslin and a touch of tarragon

  • Tiger prawns or carabineros sautéed with ginger butter and limoncello

  • Epoisses de Burgundy

  • Langres refined with a touch of champagne or white wine
