Olivier Leflaive Chassagne Montrachet Houillères 2022 75cl.
The Olivier Leflaive Chassagne-Montrachet "Les Houillères" 2022 is a cuvée of category Village singular and highly coveted within the catalog of the maison. It comes from a lieu-dit (specific payment) located in the northern strip of Chassagne-Montrachet, right on the border with the municipality of Puligny-Montrachet (adjacent to such prestigious plots as Les Enseignères and located just below the Grand Cru Bâtard-Montrachet).
Due to its geographical location, this wine combines the characteristic richness and volume of Chassagne with the elegance, floral tension and aromatic precision associated with Puligny-Montrachet. Being close to the border with Puligny-Montrachet, the soil of Les Houillères provides a particular mineral fineness that is not usually found in the southern Chassagne payments. It is usually considered one of the best lieux-dits level Village of the entire appeal. A round and solar vintage in Burgundy, characterized by the impeccable maturity of Chardonnay combined with very clean acidity. In Les Houillères, this translates into bright white fruit and a silky texture without loss of tension.

Winemaking
Grapes: 100% Chardonnay
100% manual harvest in small perforated boxes of 13 kg to avoid premature breaking of the clusters. Strict selection of the grapes upon arrival at the winery.
Progressive pressing of the whole bunches in a pneumatic press. The must goes into tanks to carry out a débourbage (static cold decantation) for 12 to 24 hours to separate the thick lees.
Aging for 12 months in French oak barrels (with a moderate percentage of new wood of around 15-20% to respect the personality of the Plot). Moderate lees removal (bâtonnage) at the beginning
Tasting notes
View:
Very bright, clean and luminous straw yellow, with subtle greenish nuances that reflect the vitality of the 2022 vintage. Totally transparent and crystalline, with a fluid and constant tear that anticipates an impeccable balance between texture and freshness.
Nose:
Nose of great finesse and aromatic elegance. Notes of orange blossom, hawthorn and jasmine stand out, accompanied by crisp white fruit (water pear, vine peach and Fuji apple) with a citrus touch of lemon peel. Delicate and subtly assembled wood (15-20% new oak), providing elegant nuances of fresh hazelnut, soft butter, brioche dough and a light nuance of vanilla. Marked memory of limestone, flint stone and salt breeze, greatly influenced by the proximity of the plot to the border with Puligny-Montrachet.
Mouth:
Precise, refined and fresh entry that envelops the palate without stridency. Stylish, fluid and with a very elegant silky texture. It shows the noble body of Chardonnay de Chassagne combined with the tension and definition typical of the Puligny border. Supported by a thread of clean and vibrant citric acidity that balances the unctuousness and gives it great verticality. Long, insightful and markedly saline finish. It leaves an elegant aftertaste of citrus zest, freshly roasted nuts and a constant echo of limestone.
Food pairing
The star pairing for the Olivier Leflaive Chassagne-Montrachet "Les Houillères" 2022 is thewild turbot or sole a la Meunière (or with a mild sauce beurre blanc with lemon), as well as thescampi or scallops seared in the pan with compound butter.
Being a cuvée located on the exact border with Puligny-Montrachet, it combines the meatiness of Chassagne with the mineral and floral finesse of Puligny, which is why it demands dishes where marine precision, the fatty touch of butter and acidity citrus dialogue in perfect balance.
