The Olivier Leflaive Chassagne-Montrachet 2023 is a Village category white wine that reflects the roundness, structure and aromatic richness characteristic of this prestigious appellation of the Côte de Beaune. Compared to the mineral tension of Puligny or the intense creaminess of Meursault, Chassagne-Montrachet stands out for providing greater density, floral nuances and notes of toasted nuts.

The mixture of loamy and calcareous soils of the plots selected by Olivier Leflaive provides a profile with more body, width and meatiness than its neighbors to the north. It has a gentle slope that favors homogeneous ripening of the grapes. It was a generous and bright harvest in Burgundy. The grapes reached an ideal state of maturity, preserving great aromatic freshness, resulting in wines that are accessible in their youth but with solid aging capacity.

Winemaking

Grapes: 100% Chardonnay

The 100% Chardonnay grape comes from selected plots and is hand-picked in small perforated boxes to preserve the integrity of the cluster and prevent premature oxidation.

The whole bunches are subjected to progressive pneumatic pressing. The must undergoes a débourbage (static cold decantation) for 12 to 24 hours to separate the coarsest lees before moving into wood. The clean must passes into French oak barrels where it ferments with native yeasts. It completes 100% malolactic fermentation, providing natural stability and volume.

The wine is aged in barrels with a moderate percentage of new oak so as not to overload the wine. During the first months, fine lees are stirred (bâtonnage) to develop unctuousness and nuances of dried fruits. The wine is transferred to stainless steel tanks for a final 4 months to integrate the wood, fix the citric acidity and assemble the aromatic profile before bottling.

Tasting notes

View:

High intensity straw yellow with luminous golden flashes and slight greenish reflections that reveal its youth. Crystalline, bright and clean. It presents a slow falling tear that heralds volume and structure in the mouth.

Nose:

Nose of great richness and aromatic kindness. Ripe notes of white peach, fuji apple and apricot are appreciated, intertwined with a prominent floral profile (acacia flower, hawthorn and orange blossom). Subtle and balanced integration thanks to the moderate percentage of new oak (15-20%). An elegant range of fresh hazelnut, soft butter, brioche dough and a touch of sweet vanilla emerges. Earthy touches, wet stone and slight salinity that anchor the wine to the terroir of Chassagne.

Mouth:

Wide, round and fleshy entry that covers the palate from the first moment. Generous and enveloping. It shows the density and opulence typical of Chassagne-Montrachet, with a silky texture supported by a firm core of citric acidity that gives it fluidity and avoids any sensation of heaviness. Excellent volume, glyceric and fleshy, with a very well integrated tension. Long, tasty and persistent finish. It leaves a refined memory of toasted nuts, candied lemon zest and a constant chalky and saline nuance in the aftertaste.

Food pairing

The star pairing for the Olivier Leflaive Chassagne-Montrachet 2023 is the Bresse pulard or breast of poultry with cream sauce and morels, or some butter-glazed veal sweetbreads. The greater opulence, structure and meaty density characteristic of terroir from Chassagne-Montrachet embrace the creaminess of cream sauces and the texture of white meats, while its vibrant acidity cleanses the palate after each bite.
