Legaris Alcubilla de Avellaneda 2019 is a red wine that shows a perhaps less known Tinto Fino profile, such as that of the province of Soria. From a small vineyard located in Alcubilla de Avellaneda, they make this unique wine with a very peculiar Tinto Fino profile. This structured, aromatic and elegant wine pairs with intense and brothy first courses based on fish: bullaibese, marmitako, stews. Due to its delicacy and freshness, it is a good companion to meats with bechamel, such as cannelloni. It also pairs with tasty meats with red fruit sauces: duck magret, Pekin duck, and with all kinds of sweet and sour Thai sauces. Having such a wide aromatic complexity, it can perfectly accompany a tasting menu. Prizes and scores:

Description
PREPARATION
Grapes: 100% Tinto Fino. The alcoholic fermentation of Legaris Acubilla Avellaneda 2019 took place in a small truncated conical stainless steel tank. It was developed spontaneously, with native yeasts, with the aim of preserving the uniqueness of this area. Their intervention was minimal (except for frequent manual bashing) and the expression of the grape is maximum. The malolactic fermentation, as well as the subsequent aging, took place in 225-liter French barrels for 15 months. Subsequently, the final blend was made and in order to maintain its typicality, it was decided to bottle it raw (without clarifying and without filtering). This wine, like the rest of the winery's innovative range (Calmo Legaris, Premos de Legaris and Vinos de Pueblo), has a generic Cosecha back label.
TASTING
View: Intense ripe cherry color with a dark violet rim. Dense and high layer.
Nose:
On the nose, notes of ripe fruit stand out, complemented by spicy (pepper, clove) and toasted nuances.
Mouth: In the mouth it shows vigorous tannin, a dense palate and a broad texture, a sign of the concentration of the vintage.
The recommended consumption temperature is 16 ºC.
