Isle of Jura 19 Years The Paps is a well-balanced single malt whiskey, named after the famous Paps of Jura on the western side of the island. And it is made by hand in the distillery on the Isle of Jura, a remote island off the west coast of Scotland. Description
PREPARATION
Jura whiskey is made with barley, yeast and pure water, coming from the top of the highest mountain range on the island, the Paps del Jura. Water, or sometimes snow, seeps down the mountain range and into Market Loch below, 1,000 feet above sea level. This water reaches the distillery through streams and waterfalls to help shape the exclusive Single Malt. The distillation is carried out in some of the highest stills of all the distilleries on the islands, in order to obtain the purest alcohol possible. Isle of Jura 19 Years The Paps ages in bourbon and American white oak barrels and is gently finished in carefully selected barrels that previously contained 40-year-old Pedro Ximénez Sherry. This maturation gives the whiskey notes of vanilla, toffee, cinnamon and cream from the bourbon barrel, classic notes of oily peat along with delicious dried fruits, sweet wine, tannins and oak flavors provided by the PX barrel.
TASTING
View: Golden mahogany color.
Nose: Powerful aromas of ginger, vanilla and balsamic.
Mouth: Flavor of spiced pear, fig syrup and mocha with a complex and long-lasting finish of toasted nuts.
