PREPARATION
Grapes: Chardonnay and Pinot Noir.
2000 was a year marked by the alternation of cold and rainy periods, and warm and stormy periods. The summer was unpredictable and unpleasant. The weather miraculously improved during the last days of August, and this favorable period lasted until the end of the harvest. After nearly 15 years of slow transformation in the cellars, Dom Pérignon expands its energy and rises to a paroxysm of essential and radiant vitality, in its state of Plénitude. Raised to new heights, it unfolds in all dimensions: wider, deeper, longer, more intense and endowed with greater longevity. The winery declared Dom Pérignon Plénitude Deuxieme P2 2000 as a Dom Pérignon elevated to its second life.
TASTING
View: Bright bronze gold color.
Nose: The bouquet is ripe, tonic and generous. The warm character of the harvest and brioche mixes with bergamot and large-seeded copper fruits. The set breathes with smoky gray accents.
Mouth: Vibrant, the attack asserts itself directly, as a prelude to a richness that is more tactile than fleshy and expands progressively. The containment of its defined viscosity fits the contours of the wine. Its duration is exquisitely bitter and sappy, where licorice and toasted malt mix.
