Description
PREPARATION
Grapes: Macabeo, Xarel·lo and Parellada
Grape harvesting is done manually, the must is obtained using pneumatic presses, using only the flower must for this cava, obtained without press pressure. The must is left to rest for 24 hours, once cleaned and settled it is transferred by variety to the fermentation tanks. The first fermentation is carried out in stainless steel tanks at a controlled temperature of 14-16° C. In these tanks, our own selected yeasts are sown, which come from the Freixenet collection, and the first fermentation begins between 10 and 12 days. After a series of racking and treatments, the base wine is prepared for blending and subsequent bottling, where it will undergo the second fermentation in the bottle. It is made with wines from different vintages and this combines the best qualities of each of them. The printing or bottling and subsequent aging in cellars is carried out with a cork stopper and a clip, which allows you to acquire your personal bouquet.
TASTING
View: Bright straw yellow with fine and abundant bubbles, forming a marked crown.
Nose: Powerful aromas of aging, dominating toasted tones well harmonized with aromas of dried fruits (hazelnuts). Notes of smoked, coffee, yeast, pastry, ripe fruit (ripe pippin apple), honey and something balsamic.
Mouth: Elegant, lively palate with good structure. Long-aged flavors predominate, but the good presence of carbon in the mouth and the soft acidity make it slightly fresh.
Recommended temperature: 6-8º C.
