PREPARATION
Grapes: Bobal, Tempranillo, Mencía, Marselans, Graciano and Garnacha.
The plots of the Ahillas Tinto 2022 wine range between 840 and 1,200 meters of altitude, with which they work on high-altitude viticulture. To make it, each of the varieties used has been made together since its fermentation, and this is thanks to the fact that the harvest season is regulated for each of them. Fermentation takes place in stainless steel tanks at 24ºC, and malolactic fermentation takes place in French (75%) and American (25%) oak. It is aged for a period of 12 months in barrels and subsequently spends 6 months in the bottle where it is rounded and obtains its complexity. The Martínez Palmero family has been producing their wines in an artisanal way since 2002. They started in a garage with 100 bottles, and today they make 22,000 of their 5 wines in the Ahillas Valley, whose lands have been cultivated since the ancient Muslims occupied the Iberian Peninsula.
TASTING
View: At first glance we perceive that this wine is in optimal condition for consumption and that its life has a long journey, since we find violet and purple tones within the cherry red that surrounds it. The tear is slow and very dense.
Nose: After aerating it we find hints of licorice, mineral tones and very ripe red fruit. Subtle lactic aromas can be slightly appreciated.
Mouth: In the mouth is where this wine brings out its full potential, with acidity and alcohol very well integrated within a soft, velvety and light palate, which remind us of the great wines of Bordeaux or Côtes-du-Rhône.
Recommended temperature: 16ºC.
