The Valencia Protected Designation of Origin is located near the Mediterranean coast of the east of the country at an altitude that ranges between 250 and 1000 meters. The climate is warm and the influence of the Mediterranean Sea is very dominant. For centuries, vines have been cultivated in limestone-clay soils, which in combination with the constant presence of intense sun give rise to fruity wines with very good structure and moderate tannins. Description
PREPARATION
Grape: 100%Pinot Noir Careful selection of the best Pinot Noir grapes. Gentle crushing of the grapes and short maceration with the skins. Discovered exclusively from the tear must, obtained by gravity. Fermentation in stainless steel tanks for 20 to 25 days under temperature control (14º) and using native yeasts. Subsequent racking to a 5,000L French oak foudre for 2 months before bottling.
TASTING
View:
Bright pale pink.
Nose: Fruity, with intense notes of red fruits and dairy with a light roasted background, the result of aging in foudre.
Mouth: Fresh but intense, very pleasant and balanced acidity.
Ideal service temperature between 6 and 8ºC.
