Preparation:
The Pilchardus sardines with which this preserve is made are obtained by purse seine fishing in the Galician Rías, between May and December. They are transported buried in salt, as traditionally, and are toasted before being packaged by hand with extra virgin olive oil accompanied by a chilli.
