Description
PREPARATION
Grape: 80% White Grenache and 20% Chenin. With this white wine, Grenache and Chenín are harvested at the same time, when the Grenache is at its point of maturation. At that time, Chenín would be a few days away, but this is precisely how it helps us maintain the acidity of this wine. Once in the winery, the two varieties are pressed together, the must is racked and racked to a concrete tank, where it ferments at a controlled temperature of 16-18ºC. The fermentation started with native yeasts and, once finished, it was racked to remove the thickest lees and the fine lees were left behind. During the first two months of aging, one bâtonnage was done per week and the wine remained in the concrete tank. After two months, it was statically aged with the fine lees at the bottom of the foudre.
