PREPARATION

Mount Gay Eclipse is made from a blend of all Mount Gay Rum varieties. It is said that this rum has been produced since 1663. Its long and slightly smoky finish is due to its aging in American oak barrels that previously contained whiskey, specifically from the state of Kentucky. This rum, distilled in Barbados, is the result of 300 years of knowledge, experience and refinement applied to the rum production process. Mount Gay Rum is made from 3 essential ingredients: coral filtered water, natural free-range yeast married to a proprietary heirloom strain and molasses; through 3 essential stages: fermentation, distillation, maturation and mixing. Its distillation is carried out using a pot still and a column still, the first produces intense aromas from the double distillation and the column still creates a rum with a notably soft flavor and character from a single distillate. Both distillations are mixed and matured. Creating the quality and legacy of rum that only Mount Gay can be.

TASTING

View: Bright, luminous, golden amber color on first impression.

Nose: Distinctive notes of vanilla and banana, with underlying notes of caramel, summer fruits and spices.

Mouth: Light to medium body. Oak character with light burnt notes.
