This Single Still Versailles rum is one of 6 strictly limited bottlings in the El Dorado Versailles Special Cask Finish series, produced at Demerara Distillers' Diamond Plantation in Guyana. The rum was gently distilled in 2005 in the unique Versailles wooden still, a unique relic of the Versailles plantation located on the west bank of the Demerara River. The Versailles wood-fired plant is the last operating wood still plant in the world.

Description
PREPARATION
This rum was first matured for 8 years in ex-American bourbon barrels and then for another 8 years in French oak barrels for its special barrel finish, which is actually a “double aging” process. These are special barrels in which sweet white Sauternes wines were formerly stored and come from a single winery in the Bordeaux region.TASTING
