PREPARATION
Grapes: Chardonnay.
Besserat de Bellefon Blanc de Blancs is a cuvée resulting from the unique and very specific Champagne-making method that has been perpetuated by Besserat de Bellefon since 1930, made with grapes from only 6 Grand Crus villages. It consists of adding less “liquor de tiraje” (a mixture of sugar, yeast and must) at the time of bottling, which creates a lighter and more transparent effervescence formation. The mousse is soft, creamy and persistent. A distinctive feature of this Blanc de Blancs is the absence of malolactic fermentation. It is aged for 3 years on lees, spending a minimum of 6 months after disgorgement.
TASTING
View: Bright yellow color, pure, with a fine bubble.
Nose: Mineral, subtle with citrus notes and touches of acacia, saline, diaphanous.
Mouth: Vibrant and precise, tense and chalky.
Recommended temperature: 8-10ºC.
