Description
PREPARATION
Grapes: 100% Tinta de Toro.
The grapes used to make Campesino Tinto 2019 wine went through a cold pre-fermentation process, for 4–5 days at 6°C, in vats with floating caps and alcoholic fermentation with crushing, devatting and pumping over regularly. At the end of fermentation, and as a consequence of the tastings, the wine was left to macerate on its lees for a week in order to extract a finely worked tannic structure. Malolactic fermentation took place in fine-grained French barrels and stainless steel tanks. It was aged for 6 months in 100% French oak barrels. 2019 was a year of great drought. The quality of the grapes remained preserved, because there was no burning heat wave phenomenon. The berries remained in a very healthy state and come from organic agriculture, certified for the red variety plots since 2019 and in transition for the white grape plots. They work without SSO2 and the wines are only corrected at the last moment in minimal doses.
