PREPARATION
Grapes: 100% Garnacha
San Román Garnacha 2021 is the third installment of a single-varietal that broke the mold in a denomination where Tinta de Toro predominates. It comes from vines planted 60 years ago on sandy soils in the Los Almendros area, certified organic and now with biodynamic practices. San Roman Garnacha 2021 is made in an artisanal way. Manual harvest in 12 kilogram boxes. Vinification with whole cluster and gentle manual treading of the skins during spontaneous fermentation that lasted 21 days at temperatures of up to 23 ºC. Aged for 19 months in 500-liter French oak barrels.
TASTING
View:
Dark ruby color with violet reflections. Forms dense and elegant tears.
Nose:
Intense and seductive. Elegant floral and red fruit aromas predominate.
Mouth:
Succulent and juicy. Gives a fluid and fresh profile. Predominance of berries and ripe cherries, on a background of undergrowth and licorice. The oak is perfectly integrated, with abundant tannin and a magnificent sensation of juiciness and freshness in the finish. Service temperature: 16ºC
