Raimat Turons de Vallcorba 2020 Organic 75cl.
Turons de Raimat, the expression of the specific terroirs of its estates, with unique and singular characteristics. From this idea Turons Vallcorba was born. Small productions of high quality wines with their own personality. Selected corners of the best vineyards arranged on the slopes of the Raimat hills, with minimal human intervention: the vineyard expresses itself as it is. Pruning and esperguras are minimal, giving small and very intense grapes, which in turn give wines as unique as Turons de Vallcorba. Perfect accompaniment to red meats, game stews and aged cheeses as well as chocolate and red fruit desserts, but without pure cocoa, to balance the overall tannicity. Prizes and scores:

Description
PREPARATION
Grapes: 100% Cabernet Savignon. Raimat Turons de Vallcorba has a selective manual harvest of the best plot of this “turó”, which is an elevation of the land, and of that only the optimal area. The grapes are picked at dawn, taking advantage of the lowest temperatures to preserve all their aromas, in 10 kg boxes, preventing the grapes from oxidizing, and are quickly transported to the winery to be processed. Cold pre-fermentation maceration is carried out to enhance the fruit aromas and obtain a better structure and color. Fermentation takes place together with the skins in stainless steel tanks at a controlled temperature of 25-28ºC. During this time, pumping over is done with different frequency and intensity, depending on the moment of fermentation, in order to extract the best qualities of the grapes. Once the fermentation is finished, contact with the skins is maintained in order to achieve greater extraction of aroma, color and structure. Once the post-fermentation maceration is complete, the wine is separated from the skins and pressed for malolactic fermentation in a stainless steel tank. Once finished, the wine passes into a French oak barrel where it is aged for 20 months, seeking to preserve the fruit in a long-aged wine.
